How to Make Russian Tea - Try This Delicious Recipe
Far from the tea growing parts of the world, Russians got into drinking tea quite late compared to many other cultures, but they managed to create a very distinctive tea culture anyway. Traditionally Russians start with a tea concentrate called zavarka to which they add hot water and some combination of sugar, honey, lemon, and fruit preserves to personal taste. Sitting around the samovar (Russian teapot) implies having a friendly conversation, much as the expression "let's have coffee" suggests the same thing to Americans.
The American version of Russian Tea is a sweet concoction that has little to do with Russia and less to do with traditional tea as most people think of tea. It is, however, a good pick me up for a cold day.
While there are many variations on the recipe for Russian Tea, they usually involve cinnamon and cloves to impart a spice flavor, powdered drink mix to deliver a citrus flavor, some form of tea, and a large dose of sugar.
This Russian Tea recipe creates a jar full of pre-made mix that will provide many cups on demand.
1/2 cup instant tea
2 cups Orange Tang or similar
1 large package powdered lemonade with sugar
2 cups sugar
2 tsp. cloves
2 tsp. cinnamon
Mix the ingredients well and store the ready to use mix in an airtight jar or plastic container. To serve, place 2 heaping teaspoonfuls of your prepared mix into 1 cup of boiling water. Stir to dissolve the sugar and then enjoy.
Ready for a tea party? Then join me in my exploration of the world of the teacup and teapot: http://www.teacupandteapot.com.
I simply love, adore and I am fascinated by anything related to a teacup and teapot. Come and share my joy of learning about the different teapots at http://www.teacupandteapot.com/russian-tea-pots.html.

My Tea Set, Gongfu Table, and Chinese Tea Culture
I recently went to China; Beijing to be exact. I found that after exploring the city for a month, having tried all the local fare, taken in the famous sites, i.e. the Great Wall, the Temple of Heaven, etc., one of the most unique and beautiful aspects of Chinese society is its tea culture.
All around Beijing there are little teahouses. Inside these teahouses are little rooms, which are not unlike those found on trains. They are very small, have two couches along the walls opposite each other, and a table in the middle. Also, there is a door to each little room. A friend took me to one of these houses, and I was surprised by how quiet they are inside. A woman took us to a room and seated us, then brought us tea on a special table. It was this little table that caught my attention. It was beautifully and ornately carved, and seemingly very old. I was caught off guard when she set the teacups in a row on top of the table and then proceeded to pour boiling hot tea down the line of cups, showing no regard for the exquisite craftsmanship underneath. However, I was soon informed that it was customary to pour the tea like that, in fact, that this special table was made just for this; it was called a gongfu table. They have a hidden tray below the lid, which catches the tea, and water that falls through. So, when you are done drinking you may just pour the remaining tea onto the table and then wipe it down with a tea towel, a special towel, similar to a washcloth, used to maintain gongfu tables.
At this point I knew I just had to have an authentic tea set of my own, along with a gongfu table. I had never seen anything of the like in the United States. So after tea, I promptly made my way to the tea streets of Beijing. I don't know what you call them exactly, but I'm sure if you go there you can ask someone and they'll know what you're talking about. I couldn't believe there were so many buildings dedicated to nothing but tea paraphernalia. There are little family tea stores everywhere at the street level, and hundreds, if not thousands, of other tea stores in mall-type buildings, some of which are five stories high. I searched through most of them for hours, trying to find just the right tea set and table. The variations in design are astonishing. Some are huge, some are stone, some are small, and most are wooden. Ultimately, I found the perfect table for myself, as well as the perfect tea set. The table was small, stained a dark green, and had little leaves and berries carved along its sides. I found a white china tea set, which was a beautiful contrast against the dark table.
So, if you like tea at all or are interested in Chinese culture, I encourage you to do some research and learn more about traditional Chinese tea culture. And if you want to get something uniquely Chinese, then go shopping for a gongfu table. These are incredible pieces of culture and history, but also practical, gorgeous works of art.

Men and Tea - Teaware, Tea Culture, and Gender
While for centuries western women have enjoyed afternoon tea, men hear the word "tea cup" and think of a dainty porcelain cup covered in flowers. For this reason alone, a lot of men have been turned off by tea.
This came to my attention when the 14-year-old son of a friend became interested in tea only after being introduced to Chinese tea. He had to be bribed into coming to Chinatown for tea, sporting a pair of dark sunglasses, just in case a friend of his might see him at the teashop. But then something great happened: the gaiwan appeared. A Chinese man deftly steeped and poured tea from the gaiwan into a serving vessel. "Cool," the kid said, non-committally. By the third steeping, he was fully engaged, focused, and fascinated.
Originating in Chinese tea culture, "gaiwan" means "covered bowl", and is a three-piece set comprising a saucer, vessel, and lid. It is perhaps the most ubiquitous tea ware in the world, considering the great number of Chinese people who prepare and sip tea with it. Gaiwans are cool, masculine even in contrast to my grandmother's Limoges teaware. This is "real men's" tea ware. No flowers, frills, or obviously feminine lines. I could see Clint drinking from a gaiwan, raising his squinty-eyed, chiseled face in stoic silence through the hot steam and hissing a line as quiet and rich as the steam itself.
Chinese gaiwans as well as Japanese tea bowls and Moroccan tea glasses could be put in the hands of any man without necessitating the extending of a pinky, and with few exceptions, are monochrome, neutrally glazed, or covered in dragons. What guy could feel like a sissy with these in his hands?
The vast majority of Asian tea masters are men, and in fact, the tea industry itself is known as a "gentleman's" business. Women might drink much of the tea in the western world, but men are usually the ones buying and selling it in the wholesale market. Winnie Yu, co-owner and chief tea buyer for Teance in Berkeley, CA, said "There are few women in the tea trade, it's predominantly a male business, and although I get on just fine with them, that's because the farmers generally regard me as a niece [who] has less to prove. So it's worked for me OK. Otherwise yes, I do get snickers from time to time."
Most people think of a delicate Asian female serving tea when they think of the classical Japanese tea ceremony, but in truth, the most prominent Japanese tea masters are men. One of the biggest surprises at a Japanese tea ceremony class at the Urasenke Foundation in San Francisco was the male-dominant ratio of students in the evening classes--and none of them were Asian. More and more American men are inspired and engaged by Asian tea culture, which is mutating and fusing in the landscape of the "new world".
All of this is great news for American tea culture. The influence of Asia is bringing the tradition of gender-neutral or male-leaning tea culture and tea ware to our shores, and this makes for a great balance. Go to any non-British tearoom, where doilies and flowery tea ware cannot be found, and you will find highly educated, well-healed, masculine men imbibing in the best of teas. Check it out. Throw off all notions of tea parties, and join in the old tea traditions finding new inroads in America.

Tea Culture and Its Importance to India
Origins of the Culture
Tea drinking in India first started (or was at least first documented), in 750 B.C. Tea is indigenous to the Northern and Eastern parts of India and has since grown exponentially, making India one of the largest growers and producers of tea in the world. The majority of tea is used within India itself, and since its use by Buddhist monks, has been utilized for thousands of years. Its use as a drink was started by local regions in the country using the wild native plants in their area. Since then, hundreds of varieties are developed and grown, with Darjeeling and Assam perhaps being the most popular worldwide. The world famous British East India Company started commercial production of tea in India and converted massive tracts of land to its production.
Development of the History
In the 16th century, a Dutch explorer noted that the people used the tea leaves a s a vegetable side dish, along with garlic and oil as well as boiling the leaves to make a drink from them. In the 1800s, people in Assam told a Calcutta publisher that the imported seeds of Chinese tea were now growing as plants in their area jungle. The British East India Company took over the cultivation in Assam and in 1837 they established the first English Tea Garden there. By the turn of the century this region in Assam became the leader in the entire world, for tea production
India and Tea in the 21st Century
India was recently surpassed by China (due to the vast acreage available there) as being the top producer of tea. India is the world's largest tea drinking country and they have acquired British brands Tetley and Typhoo. Per person, the average consumption is less than a cup but this is due to income level (low) and the large population. India does lead the world in most tea technology but the ways that the crop is harvested varies by the scope of the terrain and the variety of the tea. Small and fine-leaved teas are hand plucked, or shears are used if the slopes are mountainous. Low grade tea for teabags can be harvested by machines and the fine tea "lint" created when the tea is being processed is used as a caffeine source for medicines, soft drinks and other products. Through the centuries, tea has become integral to the Indian culture, economy and way of life. Take tea away, and you remove the essence of this vibrant and populous Asian country.

Tea Culture in America
The most commonly consumed tea in the western world today is black tea. Second only to coffee in its popularity, it has proven to be the favorite with Americans in every part of the country. While we may be unified as to what type we like, how we drink it is often unique to local or regional cultural. Even though 80% of all served in the United States is served iced or cold, where you live in the United States may decide how you drink it.
In the South, most tea is iced and sweet and is drank around the year. Most Southern restaurants serve it sugar sweetened and with a slice of lemon perched on the edge of the glass. If you prefer it with no sugar in yours, order it plain or un-sweet. When having dinner at someone's home, expect sweet tea with your meal, but don't worry, a good hostess always has a picture of unsweetened on hand just in case.
To make a pitcher of ice tea use double the amount of leaves or tea bags you would use for the same amount of hot tea. Loose leaf tea is delicious hot or iced. Just fill an infuser with your favorite tea leaves and steep in boiling water. Remember to leave some space in the infuser for the leaves to expand when they hydrate. When using tea bags, three or four large bags steeped in two quarts of boiling water will yield a gallon of tea. After steeping the desired amount of time to achieve the strength you want, add sugar to suit your taste and two quarts of cold water. Be sure to chill the tea before pouring it over the ice in the glasses. To prevent diluting the whole pitcher only add ice to the individual glasses before pouring.
In the North I am told, 'tea' is served hot and not with ice unless requested. In the winter, Southerners and Northerners alike enjoy 'hot tea' as it is called here in the South. If loose leaf tea is used, a teaspoon of tea leaves steeped in six ounces of boiling water for three to six minutes will yield a pleasant cup. The strength of the tea, whether brewed with tea leaves in an infuser or a bag, depends on the length of time the leaves steep in the hot water.
Tea is a beverage enjoyed for centuries in every region of the world. Loose or bagged, and is enjoyable with meals and is a pleasant way to warm up, or cool down or to just relax. Have some hot or cold, sweet or plain every day.
